Communication privacy has two layers: the content of what you say, and the record of who you talked to, when, and how often. Modern encryption has largely solved the first layer for anyone willing to choose the right tools. The second layer (metadata) is harder, less discussed, and in many investigations more valuable than content.
These pages cover both, and are blunt about where email in particular cannot be fixed.
